Every morning I make a green smoothie for breakfast. With the leftover smoothie sometimes I make popsicles for the kids, especially in the summer (lucky them!). I mix it up a little, but the typical mix is frozen mixed berries, 1/2 a banana, mixed power greens (spinach/kale/Swiss chard/collards), a little bit of broccoli, chia seeds, flax meal and vanilla or chocolate protein powder (I really like the Food Babe’s Truvani brand - SO delicious and super clean ingredients) all in almond milk as the base. Teddy, my 4 year old LOVES my smoothies and slurps them down - Olivia (AKA, Sweet) will drink them reluctantly. Same goes for the popsicles.
She knew I was playing around with Sweet’s Syrup popsicle recipes and this morning when I made the smoothie asked “Mommy, can’t you PLEASE just today make it without the greens in there? You could make popsicles and it would taste so good with your elderberry syrup in it. Just please one day without the greens.” I’m forever sneaking vegetables in their food - she was right it was really, really good!! We went with the Vanilla Truvani protein powder, strawberries, 1/2 banana, almond milk, a little yogurt (I prefer Kite Hill almond milk yogurt or make my own) and Sweet’s Syrup. Delicious and healthy combo - I love it when healthy and yumminess collide!
The exact recipe for me is a little tricky, because I just eyeball it and just throw stuff in there - this is my best guess and you could add a little more or little less based on your preferences!
Fill up your blender (I LOVE my Vitamix) with:
1 1/2 cups of almond milk
1/4 cup of yogurt (dairy free is what we use, Kite Hill is favorite)
1/2 cup of strawberries (mixed berries would be good too!)
2 Tablespoons of Sweet’s Elderberry Syrup
Mix and fill into your popsicle molds, freeze and enjoy!!
